What you need:
1 tablespoon butter
1 cup Jasmine rice
1/2 teaspoon sugar
1 large or 2 small limes
2 cups chicken broth
3 tablespoons cilantro, minced
salt, if desired
Directions:
In a medium sized skillet or saucepan, melt the butter over medium heat. Add rice and sugar, and saute for a couple minutes, then add the juice of 1/2 large lime, or 1 small lime. Stir for a minute, then add chicken broth and salt, if desired. Cover and cook for 15-20 minutes, or until broth is absorbed and rice is tender, stirring occasionally. Stir in cilantro, taste, and add more lime juice if needed.
