Jade Red Chicken


Ingredients For The Chicken:
1 Lb boneless, skinless chicken breasts, cut into bite size pieces
2 eggs
1 tsp garlic salt
1 tsp garlic powder
1 1/2 cups corn starch
canola oil for frying, 4 cups
Ingredients For Jade Red Glaze:
2 tsp sesame oil
1/2 cup red chili oil
1 Tbs red chili paste/sauce
1 cup ketchup (can also use tomato sauce)
1 cup powdered sugar
4 garlic cloves, minced
1 bunch green onions, chopped

Directions:
Whisk together all ingredients for glaze (except for your green onions), add to a small saucepan, and bring to a simmer over medium heat. Reduce heat to low and let cook down while you prepare the chicken. 
In a deep sided skillet or deep fryer, heat your oil to about 350 degrees. (I don't always use an oil thermometer. I know it's ready at about the 8 minute mark when heated at high heat.) For more information on deep frying instructions/safety click here.  In a large bowl, whisk your eggs together along with the garlic salt and garlic powder; set aside. Put your corn starch in a shallow baking dish. In assembly fashion: dip your chicken in the egg mixture, then dip it in the cornstarch; shaking of any excess. Add chicken to fry pan, and cook for approximately 4 minutes. (It cooks quick!) Have a large bowl ready to set your cooked chicken in.   Add your green onions to the cooked chicken. Pour Jade Red Glaze on top. Toss to coat. Serve immediately. (Serves four nicely)
