Ingredients
- 3 small zucchini squash, ends trimmed and sliced thin
- 1 small container ricotta cheese
- 1 T dried oregano
- ¼ red onion, finely diced
- salt
- pepper
- 1 jar pasta sauce
- 1 C shredded mozzarella
Instructions
- Heat oven to 400 degrees F.
- Mix the ricotta cheese, oregano, onion, salt, and pepper in a small bowl. Stir well.
- Place zucchini strips on a flat surface. Spoon a tablespoon of cheese mixture into the center of the strip and fold the ends over it.
- Place ends down in a 13x9 casserole and continue until all strips are filled.
- Pour pasta sauce over the top and sprinkle with mozzarella.
- Cover with aluminum foil and bake 30 minutes.
- Remove foil and bake another 5 minutes.
- Serve hot.
