Crunchy Chocolate Peanut Stix


Approximately 81 rectangular butter crackers (like Club crackers)
1/2 cup butter
1/2 cup milk
1 1/4 cups brown sugar
1/4 cup granulated sugar
2 cups finely crushed honey graham crackers (approx. 1 1/2 sleeves)
1 1/4 cups chocolate chips ( I used semi-sweet)
1 cup peanut butter chips

Line 13x9x2-inch baking pan with foil, leaving extra on ends for handles. Line with 25-27 butter crackers and set aside. In medium saucepan, melt butter and add in milk, brown sugar and white sugar. Bring to a simmer. Meanwhile, crush the graham crackers until they are fine crumbs. Gradually stir in 2 cups of graham cracker crumbs to the butter/sugar mixture. Simmer, stirring frequently for 5 minutes. Pour 1 cup of the mixture over the layer of butter crackers and spread evenly. Place another layer of crackers in the pan and spread the remaining butter/crumb mixture over the crackers. End with another layer of crackers. In microwavable bowl, combine the chocolate chips and peanut butter chips. Cook on high for 1 minute and stir. Continue to cook in 30 second intervals until the chips can be stirred smooth. Pour over the top of the crackers and spread evenly. Refrigerate for at least 1 hour. Carefully lift out of the pan and place on cutting board, removing the foil. Cut into 1 x 4 inch bars with a serrated knife.
