Pecan Upside-Down Cake

Ingredients:

  • 1/2 cup butter, melted
  • 1/2 cup packed brown sugar
  • 1/4 cup dark corn syrup
  • 1-1/2 cups pecan halves
  • 1 pkg. butter pecan cake mix
  • 1 cup sour cream
  • 1/3 cup unsweetened applesauce
  • 2 eggs
  • 2 egg whites
  • 1 tsp vanilla extract

Directions:

In a small bowl, combine the butter, brown sugar, corn syrup and pecans, spread evenly into a 13x9 in baking pan coated with cooking spray.  Set aside. 
In a large bowl, combing the remaining ingredients; beat with mixer on low speed for 30 seconds.  Beat on medium for 2 minutes.  Transfer to prepared pan. 
Bake at 350 for 30-35 minutes or until a toothpick inserted near the center comes out clean.  Cook for 5 minutes before inverting onto a serving platter.  Serve warm.  20 servings.
